Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup pesto sauce
  • 1 cup spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the pesto, chopped spinach, and mozzarella cheese.
  3. Cut a pocket in each chicken breast and stuff with the pesto mixture.
  4. Season the outside of the chicken breasts with salt and pepper.
  5. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes or until cooked through.
  7. Let rest for a few minutes before serving.
