Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cucumber, grated and drained
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced

Instructions

  1. Cook the chicken breast until golden and fully cooked. Once cool, dice it into bite-sized pieces.
  2. In a large bowl, combine the diced chicken, grated cucumber, Greek yogurt, minced garlic, fresh dill, lemon juice, salt, and pepper.
  3. Mix gently until everything is well-combined and coated in the tzatziki mixture.
  4. Add the cherry tomatoes, red onion, and olives. Toss everything gently to avoid crushing the vegetables.
  5. Chill the salad in the fridge for about 30 minutes to allow flavors to marry.
  6. Serve chilled over a bed of crisp lettuce or alongside warm pita.

Notes

Can be made a day in advance for deeper flavors. Customize with avocado or roasted red peppers for added variety.
