Ingredients

- 2 cups cooked chicken breast, diced
- 1 cucumber, grated and drained
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
Instructions
- Cook the chicken breast until golden and fully cooked. Once cool, dice it into bite-sized pieces.
- In a large bowl, combine the diced chicken, grated cucumber, Greek yogurt, minced garlic, fresh dill, lemon juice, salt, and pepper.
- Mix gently until everything is well-combined and coated in the tzatziki mixture.
- Add the cherry tomatoes, red onion, and olives. Toss everything gently to avoid crushing the vegetables.
- Chill the salad in the fridge for about 30 minutes to allow flavors to marry.
- Serve chilled over a bed of crisp lettuce or alongside warm pita.
Notes
Can be made a day in advance for deeper flavors. Customize with avocado or roasted red peppers for added variety.
