Description

A comforting casserole of tender chicken and cauliflower in a creamy Greek yogurt sauce, topped with gooey cheese.


Ingredients

  • 2 cups cauliflower florets
  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, cauliflower florets, Greek yogurt, chicken broth, garlic powder, onion powder, and half of the cheese in a large mixing bowl.
  3. Season with salt, pepper, and paprika, then mix until well combined.
  4. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  5. Top with the remaining cheese.
  6. Bake for 30-35 minutes, or until bubbly and golden brown.
  7. Remove from the oven and let cool slightly before serving.
  8. Garnish with fresh parsley and enjoy!

Notes

For a make-ahead option, prepare and refrigerate overnight before baking. You can also use an air fryer for quicker cooking.
