- 2 cups cauliflower florets
- 2 cups cooked chicken, shredded
- 1 cup Greek yogurt
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked chicken, cauliflower florets, Greek yogurt, chicken broth, garlic powder, onion powder, and half of the cheese in a large mixing bowl.
- Season with salt, pepper, and paprika, then mix until well combined.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Top with the remaining cheese.
- Bake for 30-35 minutes, or until bubbly and golden brown.
- Remove from the oven and let cool slightly before serving.
- Garnish with fresh parsley and enjoy!
Notes
For a make-ahead option, prepare and refrigerate overnight before baking. You can also use an air fryer for quicker cooking.
