Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and crushed pineapple.
  5. In a separate bowl, whisk together the flour, baking powder, and shredded coconut.
  6. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with the flour mixture.
