Ingredients

- 3 ripe bananas
- 1/2 cup melted butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped macadamia nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Add melted butter to the mashed bananas and mix well.
- Stir in the sugar, egg, and vanilla extract until combined.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour, crushed pineapple, shredded coconut, and macadamia nuts (if using) and stir until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, you can add a teaspoon of cinnamon.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- This bread freezes well; wrap it tightly in plastic wrap and foil.
