- 1 lb chicken breast, cut into cubes
- 2 tablespoons harissa paste
- 1 cup couscous
- 2 cups chicken broth
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- In a bowl, mix the chicken cubes with harissa paste, salt, and pepper. Let it marinate for at least 30 minutes.
- In a saucepan, bring chicken broth to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a skillet, cook the marinated chicken over medium heat until fully cooked, about 7-10 minutes.
- In a large bowl, combine the cooked couscous, diced bell pepper, cucumber, and parsley.
- Top the couscous mixture with the cooked chicken and drizzle with lemon juice before serving.
