Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 cup barley
- 1 can (14 oz) Guinness stout
- 4 cups beef broth
- 2 carrots, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Heat your large pot over medium-high heat and add a drizzle of olive oil. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
- In the same pot, reduce the heat to medium and sauté diced onions and minced garlic until soft and fragrant.
- Return the seared beef to the pot and add diced carrots, barley, Guinness, beef broth, thyme, and bay leaves. Stir and bring to a boil.
- Once boiling, lower the heat and simmer gently for about two hours, stirring occasionally.
- Before serving, taste and adjust the seasoning with salt and pepper. Serve warm, garnished with fresh thyme if desired.
Notes
Stew tastes better the next day! Consider making it in advance. Can be frozen for up to three months.
