  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper on a baking sheet.
  3. Roast until caramelized, about 40–45 minutes.
  4. In a large skillet over medium heat, add the remaining olive oil and sauté the diced onions for about 5 minutes until softened.
  5. Add the ground beef and taco seasoning to the skillet, cooking until browned and fully cooked.
  6. Assemble your bowls starting with a layer of roasted sweet potatoes, followed by seasoned beef.
  7. Top with avocado slices and spoon cottage cheese over the top.
  8. Drizzle hot honey over each bowl before serving.

Notes

Make-ahead tips include preparing sweet potatoes and beef a day in advance. For a lighter twist, substitute ground beef with turkey or plant-based protein.
