- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper on a baking sheet.
- Roast until caramelized, about 40–45 minutes.
- In a large skillet over medium heat, add the remaining olive oil and sauté the diced onions for about 5 minutes until softened.
- Add the ground beef and taco seasoning to the skillet, cooking until browned and fully cooked.
- Assemble your bowls starting with a layer of roasted sweet potatoes, followed by seasoned beef.
- Top with avocado slices and spoon cottage cheese over the top.
- Drizzle hot honey over each bowl before serving.
