A delicious and vibrant dish featuring grilled shrimp served on crispy tostadas, topped with fresh guacamole and pico de gallo.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 tostada shells
  • 2 ripe avocados
  • 1 lime, juiced
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, minced
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, salt, and pepper.
  3. Grill the shrimp for 2-3 minutes on each side until cooked through.
  4. In another bowl, mash the avocados and mix in lime juice, salt, and pepper to make guacamole.
  5. In a separate bowl, combine tomatoes, onion, cilantro, jalapeño, lime juice, salt, and pepper to make pico de gallo.
  6. Assemble the tostadas by spreading guacamole on each shell, topping with grilled shrimp, and finishing with pico de gallo.
  7. Serve immediately and enjoy!

Notes

  • For extra flavor, marinate the shrimp for 30 minutes before grilling.
  • Adjust the spiciness of the pico de gallo by adding more or less jalapeño.
