Ingredients

- 1 pound large shrimp, peeled and deveined
- 2 cups fresh pineapple, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into 1-inch pieces
- 1/4 cup fresh cilantro leaves, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely chopped (optional)
- 3 tablespoons olive oil
- Zest and juice of 2 limes
- 1 tablespoon honey or agave syrup
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Extra lime wedges and chopped fresh cilantro for garnish
Instructions
- Prepare the Marinade: Whisk together olive oil, lime zest, lime juice, honey (or agave syrup), ground cumin, smoked paprika, salt, black pepper, minced garlic, chopped cilantro, and jalapeño until well combined.
- Marinate the Shrimp: Add shrimp to the marinade, toss to coat, cover, and refrigerate for 15 to 20 minutes.
- Assemble the Skewers: Thread marinated shrimp, pineapple chunks, red bell pepper, and red onion onto skewers, alternating for color.
- Prepare the Grill: Preheat grill to medium-high and oil the grates.
- Grill the Skewers: Place skewers on the grill, cooking for 2 to 3 minutes per side until shrimp are opaque and veggies are charred.
- Finish and Serve: Remove from grill, garnish with cilantro and lime wedges, and serve immediately.
Notes
For variety, swap shrimp with firm fish or chicken and try different fruits or veggies for skewering.
