Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped (optional)
  • 3 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Extra lime wedges and chopped fresh cilantro for garnish

Instructions

  1. Prepare the Marinade: Whisk together olive oil, lime zest, lime juice, honey (or agave syrup), ground cumin, smoked paprika, salt, black pepper, minced garlic, chopped cilantro, and jalapeño until well combined.
  2. Marinate the Shrimp: Add shrimp to the marinade, toss to coat, cover, and refrigerate for 15 to 20 minutes.
  3. Assemble the Skewers: Thread marinated shrimp, pineapple chunks, red bell pepper, and red onion onto skewers, alternating for color.
  4. Prepare the Grill: Preheat grill to medium-high and oil the grates.
  5. Grill the Skewers: Place skewers on the grill, cooking for 2 to 3 minutes per side until shrimp are opaque and veggies are charred.
  6. Finish and Serve: Remove from grill, garnish with cilantro and lime wedges, and serve immediately.

Notes

For variety, swap shrimp with firm fish or chicken and try different fruits or veggies for skewering.
