- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 ripe avocado, diced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- While the chicken is marinating, cook the orzo according to package instructions. Drain and set aside.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Let the chicken rest for a few minutes before slicing it.
- In a large bowl, combine the cooked orzo, diced avocado, and sliced chicken.
- Toss gently to combine and garnish with fresh parsley.
