Ingredients

- 2 pounds baby potatoes
- 1 cup fresh herbs (parsley, basil, chives)
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
Instructions
- Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- While the potatoes are cooking, prepare the green goddess dressing by blending the fresh herbs, Greek yogurt, mayonnaise, lemon juice, garlic, salt, and pepper until smooth.
- Once the potatoes are cooked, drain and let them cool slightly before cutting them in half.
- In a large bowl, combine the potatoes, cherry tomatoes, and red onion.
- Pour the green goddess dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
