			- 2 slices of whole grain bread
 - 1 ripe avocado
 - 1 cup spinach leaves
 - 1/4 cup fresh basil leaves
 - 1/4 cup Greek yogurt
 - 1 tablespoon lemon juice
 - Salt and pepper to taste
 - 1 egg (optional)
 
Instructions
- In a blender, combine spinach, basil, Greek yogurt, lemon juice, salt, and pepper to create the Green Goddess spread.
 - Toast the whole grain bread slices until golden brown.
 - Spread the Green Goddess mixture generously on one side of each slice of bread.
 - If using, cook the egg to your preference (fried, poached, or scrambled).
 - Slice the avocado and layer it on one slice of the bread.
 - Add the cooked egg (if using) on top of the avocado.
 - Top with additional spinach leaves and close the sandwich with the other slice of bread.
 - Cut in half and serve immediately.
 
Notes
- For a vegan option, omit the egg and use a plant-based yogurt.
 - This sandwich can be customized with additional toppings like tomatoes or cucumbers.
 - Store any leftover Green Goddess spread in the refrigerator for up to 3 days.
