- 1 lb ground beef or lamb
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup cooked rice
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- 1 cup bell peppers, diced
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground meat, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, salt, and pepper. Mix just until combined.
- Form the mixture into bite-sized meatballs and place them on a lined baking sheet.
- Bake for 20-25 minutes until cooked through and golden brown.
- Prepare the tzatziki by mixing Greek yogurt, lemon juice, minced garlic, and a pinch of salt until creamy.
- Serve the meatballs over rice topped with cucumber, tomatoes, bell peppers, and tzatziki.
