Description

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1 cup bell peppers, diced
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground meat, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, salt, and pepper. Mix just until combined.
  3. Form the mixture into bite-sized meatballs and place them on a lined baking sheet.
  4. Bake for 20-25 minutes until cooked through and golden brown.
  5. Prepare the tzatziki by mixing Greek yogurt, lemon juice, minced garlic, and a pinch of salt until creamy.
  6. Serve the meatballs over rice topped with cucumber, tomatoes, bell peppers, and tzatziki.
