  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.

  5. Meanwhile, in a saucepan, heat olive oil over medium heat. Add orzo and toast for 2-3 minutes.
