A refreshing and nutritious salad combining beans, chicken, and Greek flavors.

			- 2 cups cooked chicken, shredded
 - 1 can (15 oz) chickpeas, drained and rinsed
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 cup cherry tomatoes, halved
 - 1 cucumber, diced
 - 1/2 red onion, finely chopped
 - 1/2 cup feta cheese, crumbled
 - 1/4 cup fresh parsley, chopped
 - 1/4 cup olive oil
 - 2 tablespoons red wine vinegar
 - 1 teaspoon dried oregano
 - Salt and pepper to taste
 
Instructions
- In a large bowl, combine the shredded chicken, chickpeas, black beans, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
 - In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
 - Pour the dressing over the salad and toss gently to combine.
 - Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
 
Notes
- For a vegetarian option, omit the chicken.
 - This salad can be made a day in advance and stored in the refrigerator.
 - Feel free to add other vegetables like bell peppers or olives for extra flavor.
