- 1 cup heavy cream

Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; cook until softened (about 5 minutes).
- Stir in minced garlic and diced potatoes, cooking for 2 more minutes.
- Pour in the broth and bring to a gentle simmer; cook until potatoes are tender (about 10 minutes).
- Stir in heavy cream, frozen peas, thyme, salt, and pepper.
- Gently fold in the gnocchi and cook until they float to the surface (about 2-3 minutes).
- Ladle into bowls and garnish with chopped parsley. Serve hot.
