  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; cook until softened (about 5 minutes).
  2. Stir in minced garlic and diced potatoes, cooking for 2 more minutes.
  3. Pour in the broth and bring to a gentle simmer; cook until potatoes are tender (about 10 minutes).
  4. Stir in heavy cream, frozen peas, thyme, salt, and pepper.
  5. Gently fold in the gnocchi and cook until they float to the surface (about 2-3 minutes).
  6. Ladle into bowls and garnish with chopped parsley. Serve hot.
