Ingredients
- Beef: 1 pound ground beef, preferably 80/20 for juiciness
- Vegetables: 1 cup grated carrots, 1 tablespoon fresh ginger, minced
- Filling: 1/2 cup dried cranberries, chopped, 1/2 cup walnuts, chopped
- Seasoning: 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 teaspoon garlic powder, salt and pepper to taste
- Wrap: 8 large lettuce leaves (for wrapping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground beef, grated carrots, minced ginger, soy sauce, sesame oil, garlic powder, salt, and pepper. Mix until well combined.
- Fold in the chopped cranberries and walnuts into the beef mixture.
- Take a lettuce leaf and place a generous amount of the beef mixture at the base. Roll tightly, tucking in the sides as you go.
- Place the rolls seam-side down on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the beef is cooked through and the rolls are crispy on the outside.
- Remove from the oven and let cool for a few minutes before serving.
