Description

Delight in these enchanting geode cookies that combine a crunchy exterior with a soft, chewy center, bursting with colorful candy crystals.


Ingredients

  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup candy crystals or rock candy (variety of colors)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  2. In a mixing bowl, whisk together the flour and baking soda until well combined.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar using an electric mixer until fluffy and pale.
  4. Add eggs one at a time, ensuring each is incorporated before adding the next. Mix in vanilla extract.
  5. Gradually fold the dry ingredients into the wet mixture until just blended.
  6. Gently fold in candy crystals until evenly distributed.
  7. Using a cookie scoop, portion the dough onto prepared baking sheets, leaving space between each cookie.
  8. Bake for about 10-12 minutes until edges turn golden and centers appear slightly soft.
  9. Allow to cool on baking sheets for a few minutes before transferring to wire racks.

Notes
