  • 1 medium spaghetti squash
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, sauté garlic in olive oil until fragrant, then add spinach and cook until wilted.
  6. In a bowl, combine shredded chicken, sautéed spinach, and half of the Parmesan cheese.
  7. Once the squash is cooked, use a fork to scrape the flesh into strands and mix with the chicken mixture.
  8. Stuff the mixture back into the squash halves and top with remaining Parmesan cheese.
  9. Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
