- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
- In a skillet, sauté garlic in olive oil until fragrant, then add spinach and cook until wilted.
- In a bowl, combine shredded chicken, sautéed spinach, and half of the Parmesan cheese.
- Once the squash is cooked, use a fork to scrape the flesh into strands and mix with the chicken mixture.
- Stuff the mixture back into the squash halves and top with remaining Parmesan cheese.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve warm and enjoy!

- For a vegetarian option, substitute chicken with chickpeas or tofu.
- Feel free to add other vegetables like bell peppers or mushrooms.
