A savory and juicy chicken meatloaf infused with garlic and Parmesan cheese, perfect for family dinners or gatherings.
Ingredients

- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce (low-sodium recommended)
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease your baking dish with nonstick spray.
- In a medium skillet, heat olive oil and sauté the diced onions for about 5 minutes until soft and translucent.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until just mixed.
- Shape the mixture into a loaf in the greased baking dish.
- Top the loaf with the remaining Parmesan cheese.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Allow to rest for 10 minutes before slicing.
Notes
For a spicier version, add crushed red pepper flakes to the meat mixture. You can also substitute ground chicken with turkey for a lighter option.
