Description

A savory and juicy chicken meatloaf infused with garlic and Parmesan cheese, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your baking dish with nonstick spray.
  2. In a medium skillet, heat olive oil and sauté the diced onions for about 5 minutes until soft and translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until just mixed.
  4. Shape the mixture into a loaf in the greased baking dish.
  5. Top the loaf with the remaining Parmesan cheese.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Allow to rest for 10 minutes before slicing.

Notes

For a spicier version, add crushed red pepper flakes to the meat mixture. You can also substitute ground chicken with turkey for a lighter option.
