Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Coat the chicken breasts with the garlic herb mixture and place them in a baking dish.
- Bake the chicken for 25-30 minutes or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with milk and butter until smooth.
- In a skillet, melt 1 tablespoon of butter and add the sliced carrots.
- Sprinkle brown sugar over the carrots and sauté until they are tender and glazed, about 5-7 minutes.
