Description

Delicious lasagna roll-ups filled with creamy ricotta, mozzarella, and fresh spinach, drizzled with a rich garlic butter sauce.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced (for the sauce)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9″x13″ baking dish.
  2. Boil the lasagna noodles in a large pot of salted water until al dente. Drain and lay them flat on a clean surface.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, spinach, basil, eggs, minced garlic, salt, pepper, and crushed red pepper flakes. Stir until creamy.
  4. Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 2 minutes. Stir in parsley, salt, and black pepper.
  5. Spread about 2 tablespoons of the ricotta filling onto each noodle and roll tightly. Place seam-side down in the baking dish.
  6. Drizzle half of the garlic butter sauce over the roll-ups.
  7. Sprinkle remaining mozzarella and Parmesan cheeses over the top.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for another 10 minutes until golden brown.
  10. Drizzle remaining garlic butter sauce over the roll-ups and let rest for 5 minutes before serving.

Notes

You can prepare these roll-ups 24 hours in advance and bake right before serving. For a gluten-free option, use zoodles instead of lasagna noodles.
