Delicious lasagna roll-ups filled with creamy ricotta, mozzarella, and fresh spinach, drizzled with a rich garlic butter sauce.

- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 1/4 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1/4 cup fresh basil, chopped
- 2 large eggs
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced (for the sauce)
- 2 tablespoons fresh parsley, chopped
- 1/2 cup shredded mozzarella cheese (for topping)
- 1/4 cup grated Parmesan cheese (for topping)
Instructions
- Preheat the oven to 375°F and lightly grease a 9″x13″ baking dish.
- Boil the lasagna noodles in a large pot of salted water until al dente. Drain and lay them flat on a clean surface.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, spinach, basil, eggs, minced garlic, salt, pepper, and crushed red pepper flakes. Stir until creamy.
- Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 2 minutes. Stir in parsley, salt, and black pepper.
- Spread about 2 tablespoons of the ricotta filling onto each noodle and roll tightly. Place seam-side down in the baking dish.
- Drizzle half of the garlic butter sauce over the roll-ups.
- Sprinkle remaining mozzarella and Parmesan cheeses over the top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 10 minutes until golden brown.
- Drizzle remaining garlic butter sauce over the roll-ups and let rest for 5 minutes before serving.
Notes
You can prepare these roll-ups 24 hours in advance and bake right before serving. For a gluten-free option, use zoodles instead of lasagna noodles.
