- 2 cups mashed potatoes
- 1/2 cup shredded cheese
- 1/4 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the mashed potatoes, shredded cheese, green onions, salt, and pepper.
- Form the mixture into small balls, about 1 inch in diameter.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each potato ball in flour, dip in the beaten eggs, and then coat with breadcrumbs.
- Heat oil in a deep fryer or large pot over medium heat.
- Fry the potato balls in batches until golden brown, about 3-4 minutes.
- Remove from oil and drain on paper towels.
- Serve hot with your favorite dipping sauce.
Notes
- For a spicier version, add jalapeños or hot sauce to the potato mixture.
- These can be made ahead of time and frozen before frying.
