Description

Florida Shrimp Cheddar Pie is a luscious blend of tender shrimp enveloped in a creamy, cheesy filling, all nestled in a flaky crust. The savory aroma of baked cheddar mingles with the sweetness of fresh shrimp, creating a delightful sensory experience that is both comforting and indulgent.

Ingredients

Scale
  • For the crust:
    • 1 ½ cups all-purpose flour
    • ½ cup unsalted butter, chilled and cubed
    • 1/4 teaspoon salt
    • 34 tablespoons ice water
  • For the filling:
    • 1 pound fresh Florida shrimp, peeled and deveined
    • 1 cup shredded sharp cheddar cheese
    • 1 cup heavy cream
    • 3 large eggs
    • 1 teaspoon Old Bay seasoning
    • 1/2 teaspoon black pepper
    • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt for the crust. Cut in butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim the edges.
  5. In a skillet over medium heat, sauté the shrimp until pink and cooked through, about 3-4 minutes. Remove from heat and let cool.
  6. In a large bowl, whisk together the heavy cream, eggs, Old Bay seasoning, and black pepper until well combined.
  7. Stir in the cooked shrimp, cheddar cheese, and green onions into the egg mixture.
  8. Pour the filling into the prepared crust and bake for 35-40 minutes, or until the filling is set and the top is golden brown.
  9. Let the pie cool for 10 minutes before slicing and serving.

Notes

  • This pie can be made a day in advance; simply reheat in the oven at 350°F (175°C) for 15-20 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute half-and-half for heavy cream.
