Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Tortilla chips or tortillas (optional for layering)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine cooked chicken, black beans, corn, bell pepper, onion, half of the cheese, sour cream, diced tomatoes, taco seasoning, salt, and pepper in a large mixing bowl.
  3. Layer the chicken mixture evenly in a greased baking dish.
  4. Top with remaining cheese.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  6. Let it cool slightly before serving.

Notes

Assemble the casserole in advance and refrigerate, adding cheese topping just before baking. Can be customized with jalapeños or different proteins.
