Ingredients

  • 1/4 cup diced red onion
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine corn kernels, flour, cornmeal, cheese, cilantro, red onion, egg, baking powder, chili powder, salt, and pepper.
  2. Mix until well combined and a batter forms.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the batter into the hot oil, flattening them slightly.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from oil and drain on paper towels.
  7. Serve warm with your favorite dipping sauce.

Notes

  • For a spicier version, add diced jalapeños to the batter.
