Description
Elote Corn Fritters are a delicious and crispy treat made from sweet corn, inspired by the traditional Mexican street food elote.
Ingredients

			- 2 cups fresh corn kernels
 - 1/2 cup all-purpose flour
 - 1/4 cup cornmeal
 - 1/4 cup grated cheese (Cotija or Parmesan)
 - 1/4 cup chopped cilantro
 - 1/4 cup diced red onion
 - 1 large egg
 - 1 teaspoon baking powder
 - 1/2 teaspoon chili powder
 - Salt and pepper to taste
 - Oil for frying
 
Instructions
- In a large bowl, combine corn kernels, flour, cornmeal, cheese, cilantro, red onion, egg, baking powder, chili powder, salt, and pepper.
 - Mix until well combined and a batter forms.
 - Heat oil in a frying pan over medium heat.
 - Drop spoonfuls of the batter into the hot oil, flattening them slightly.
 - Fry until golden brown on both sides, about 3-4 minutes per side.
 - Remove from oil and drain on paper towels.
 - Serve warm with your favorite dipping sauce.
 
Notes
- For a spicier version, add diced jalapeños to the batter.
 - These fritters can be served as an appetizer or a side dish.
 - Leftover fritters can be stored in the refrigerator and reheated in the oven.
