 - 1 cup breadcrumbs
 - 1 cup grated Parmesan cheese
 - 1 cup marinara sauce
 - 2 cups shredded mozzarella cheese
 - 1 teaspoon Italian seasoning
 - Salt and pepper to taste
 - Olive oil for drizzling
 
Instructions
- Preheat the oven to 400°F (200°C).
 - Slice the eggplant into bite-sized rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
 - Rinse and pat dry the eggplant slices.
 - In a bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
 - Dip each eggplant slice into the breadcrumb mixture, coating both sides.
 - Place the coated eggplant slices on a baking sheet lined with parchment paper.
 - Drizzle olive oil over the eggplant slices.
 - Bake for 20-25 minutes until golden brown and crispy.
 - Remove from the oven and top each slice with marinara sauce and mozzarella cheese.
 - Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
