Ingredients

  • 1 cup eggnog
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup additional granulated sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, combine heavy cream, eggnog, and nutmeg. Heat over medium heat until just simmering.
  3. In a bowl, whisk together egg yolks and sugar until pale and thick.
  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.
  5. Stir in vanilla extract.
  6. Strain the mixture through a fine-mesh sieve into a large measuring cup.
  7. Divide the mixture among ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
  9. Remove from the oven and let cool. Refrigerate for at least 2 hours or overnight.
  10. Before serving, sprinkle a thin layer of sugar on top of each custard and use a kitchen torch to caramelize the sugar until golden brown.
