- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1 cup cooked and crumbled sausage or bacon

- 6 large flour tortillas
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together the eggs, salt, and pepper.
- In a skillet, sauté the bell peppers and potatoes until tender.
- Add the cooked sausage or bacon to the skillet and mix well.
- Pour the egg mixture into the skillet and cook until the eggs are set.
- Remove from heat and stir in the shredded cheese.
- Lay out the tortillas and fill each with the egg mixture.
- Roll the tortillas tightly and wrap them in foil or plastic wrap.
- Store in the refrigerator or freezer until ready to eat.
