Ingredients
- Sweet Potatoes: 4 large sweet potatoes, peeled and cubed
- Butter: 1/2 cup (1 stick), melted
- Brown Sugar: 1 cup, packed
- Milk: 1/2 cup, whole or evaporated
- Vanilla Extract: 1 teaspoon
- Eggs: 2 large, beaten
- Pecan Topping: 1 cup pecans, chopped
- Flour: 1/2 cup
- Granulated Sugar: 1/2 cup
- Cinnamon: 1 teaspoon
- Salt: 1/4 teaspoon
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot of salted water for about 15-20 minutes, or until fork-tender.
- Drain the sweet potatoes and return them to the pot. Mash until smooth.
- Add melted butter, brown sugar, milk, vanilla extract, and beaten eggs to the mashed sweet potatoes. Mix until well combined.
- Transfer the sweet potato mixture to a greased 9×13 inch baking dish.
- In a separate bowl, combine chopped pecans, flour, granulated sugar, cinnamon, and salt. Stir in melted butter until crumbly.

- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
