Ingredients

  • Sweet Potatoes: 4 large sweet potatoes, peeled and cubed
  • Butter: 1/2 cup (1 stick), melted
  • Brown Sugar: 1 cup, packed
  • Milk: 1/2 cup, whole or evaporated
  • Vanilla Extract: 1 teaspoon
  • Eggs: 2 large, beaten
  • Pecan Topping: 1 cup pecans, chopped
  • Flour: 1/2 cup
  • Granulated Sugar: 1/2 cup
  • Cinnamon: 1 teaspoon
  • Salt: 1/4 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot of salted water for about 15-20 minutes, or until fork-tender.
  3. Drain the sweet potatoes and return them to the pot. Mash until smooth.
  4. Add melted butter, brown sugar, milk, vanilla extract, and beaten eggs to the mashed sweet potatoes. Mix until well combined.
  5. Transfer the sweet potato mixture to a greased 9×13 inch baking dish.
  6. In a separate bowl, combine chopped pecans, flour, granulated sugar, cinnamon, and salt. Stir in melted butter until crumbly.
