  • Chicken: 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • Vegetables:
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 cup broccoli florets
    • 1 cup snap peas
  • Cashews: 1 cup roasted, unsalted cashews
  • Marinade/Sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons honey
    • 2 tablespoons sesame oil
    • 2 cloves garlic, minced
    • 1 tablespoon fresh ginger, grated

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces with soy sauce, honey, sesame oil, garlic, and ginger. Let it marinate for at least 15 minutes.
  3. On a large sheet pan, spread the marinated chicken evenly.
  4. Add the sliced bell peppers, broccoli florets, and snap peas to the pan, tossing them with the chicken.
  5. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
  6. In the last 5 minutes of cooking, sprinkle the cashews over the chicken and vegetables to toast them slightly.
