- 1 cup broccoli florets
- 1 cup snap peas
- Cashews: 1 cup roasted, unsalted cashews
- Marinade/Sauce:
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken pieces with soy sauce, honey, sesame oil, garlic, and ginger. Let it marinate for at least 15 minutes.
- On a large sheet pan, spread the marinated chicken evenly.
- Add the sliced bell peppers, broccoli florets, and snap peas to the pan, tossing them with the chicken.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
- In the last 5 minutes of cooking, sprinkle the cashews over the chicken and vegetables to toast them slightly.
- Remove from the oven and let it rest for 5 minutes before serving.
