Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of your crock pot.
  2. Pour the salsa over the chicken, ensuring it’s well coated.
  3. Sprinkle taco seasoning over the salsa-covered chicken.
  4. Add the drained black beans and corn on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fork-tender.
  6. Shred the chicken in the pot using two forks and mix it gently with the salsa and beans.
  7. Sprinkle shredded cheese over the top and cover for 5-10 minutes to allow it to melt.
  8. Serve warm garnished with fresh cilantro.
