A simple and delicious recipe for raspberry lemon bars that are perfect for any occasion.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar (for filling)
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, sugar, and salt to form a crust.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake the crust for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, sugar, lemon juice, and lemon zest.
- Gently fold in the raspberries.
- Pour the filling over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool before cutting into squares.
Notes
- For a sweeter taste, add more sugar to the filling.
- Store leftovers in the refrigerator for up to 3 days.
- Can be dusted with powdered sugar before serving.
