  • ⅓ cup packed brown sugar (70g) (for streusel topping)
  • ½ teaspoon cinnamon (for streusel topping)
  • 3 tablespoons unsalted butter (45g), cold and cubed (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Mash the ripe bananas in a large mixing bowl until smooth, leaving some small chunks for texture.
  3. Add the melted butter to the mashed bananas and stir until combined.
  4. Mix in the granulated sugar, beaten eggs, and vanilla extract, being careful not to overmix.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet banana mixture using a spatula.
  7. Combine the streusel topping ingredients until coarse crumbs form.
