- 2 boneless, skinless chicken breasts (sliced into strips)
- 2 Tbsp golden honey
- 2 Tbsp soy sauce (or tamari)
- 2 Tbsp fresh lime juice
- 1 tsp fresh lime zest
- 1 Tbsp olive oil
- Salt and freshly ground black pepper (to taste)
- 2 cups cooked jasmine rice
- 1–2 ripe avocados, sliced
- Fresh lime wedges (for garnish)
- 2 Tbsp freshly chopped cilantro or chives
- 1 tsp toasted sesame seeds (optional)
Instructions
- Whisk together the honey, soy sauce, lime juice, lime zest, olive oil, salt, and pepper until fully combined.
- Add the chicken strips to the bowl, tossing to coat each piece in the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 20 minutes.
- Heat a large skillet over medium-high heat and arrange the marinated chicken in a single layer.
- Cook for about 3−4 minutes on one side, then flip and cook for another 3−4 minutes until cooked through.
- Pack the cooked jasmine rice into a ramekin, invert it onto a plate to create a rice stack.
- Layer the avocado atop the rice, then pile the warm chicken over the avocado.
- Garnish with chopped cilantro or chives, sprinkle on sesame seeds, and finish with lime wedges.
Notes
Marinate chicken for deeper flavor, and use fresh ingredients for the best results.
