Description
A delicious and easy recipe for garlic-parmesan chicken bites served with a creamy sun-dried tomato Cajun Alfredo sauce and charred broccolini.
Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1 tsp Cajun seasoning
- 1 bunch broccolini
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the Parmesan cheese, breadcrumbs, garlic, salt, and pepper.
- Coat the chicken pieces in the olive oil, then toss them in the cheese mixture until well coated.
- Place the chicken bites on a baking sheet and bake for 15-20 minutes until golden and cooked through.
- In a saucepan, heat the heavy cream over medium heat, then stir in the sun-dried tomatoes and Cajun seasoning.
- Cook the sauce for 5 minutes until slightly thickened.
- Meanwhile, char the broccolini in a skillet with a little olive oil until tender.
- Serve the chicken bites with the Cajun Alfredo sauce drizzled on top and the charred broccolini on the side.
Notes
- For a spicier kick, add more Cajun seasoning to the sauce.
- Feel free to substitute chicken with shrimp or tofu for a different protein option.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
