- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup dulce de leche
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter and sugars until smooth and fluffy.
- Incorporate the eggs one at a time, then stir in vanilla.
- Combine the flour, baking powder, cinnamon, and salt in another bowl.
- Gradually fold the dry mix into the creamed mixture until just combined.
- Roll tablespoon-sized scoops of dough into balls and place them on a baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on a wire rack and then assemble with dulce de leche.
Notes
Store cookies in an airtight container for up to a week. They can also be frozen for longer storage.
