Ingredients

Scale
  • For the Cookies:
    • 2 3/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
  • For the Royal Icing:
    • 4 cups powdered sugar
    • 3 tablespoons meringue powder
    • 68 tablespoons water
    • Food coloring (various colors)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Roll out the dough on a floured surface to about 1/4 inch thick and cut into egg and bunny shapes.
  8. Place cookies on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Prepare royal icing by mixing powdered sugar, meringue powder, and water until smooth; divide into bowls and color as desired.
  11. Decorate cooled cookies with royal icing and let dry completely before serving.
