Description

This Easter Poke Cake is a vibrant, festive dessert that combines a moist vanilla cake with a luscious strawberry and cream filling. Each bite offers a delightful contrast of textures, from the fluffy cake to the creamy topping, all enhanced by the sweet, fruity flavor of fresh strawberries.

Ingredients

Scale
  • Cake:
    • 1 box (15.25 oz) vanilla cake mix
    • 3 large eggs
    • 1 cup water
    • 1/3 cup vegetable oil
  • Filling:
    • 1 cup strawberry gelatin
    • 2 cups boiling water
    • 1 cup fresh strawberries, diced
  • Topping:
    • 1 cup heavy whipping cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • Additional strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Beat on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is baking, dissolve the strawberry gelatin in 2 cups of boiling water, stirring until fully dissolved.
  5. Once the cake is done, remove it from the oven and let it cool for 10 minutes. Use a fork to poke holes all over the top of the cake.
  6. Pour the prepared gelatin mixture over the cake, ensuring it seeps into the holes. Allow the cake to cool completely.
  7. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Spread the whipped cream topping over the cooled cake and garnish with additional strawberries. Refrigerate for at least 2 hours before serving.

Notes

  • This cake can be made a day in advance; just keep it covered in the refrigerator.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • You can substitute the strawberry gelatin with raspberry or cherry for a different flavor.
