Ingredients

Scale
  • Crust:
    • 1 ½ cups graham cracker crumbs
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • Filling:
    • 1 cup heavy whipping cream
    • 1 cup cream cheese, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • ½ cup strawberry puree
    • ½ cup blueberry puree
    • ½ cup lemon curd

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then let cool completely.
  4. In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
  5. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  7. Divide the filling into three equal parts. Mix one part with strawberry puree, another with blueberry puree, and the last with lemon curd.
  8. Layer the fillings into the cooled crust, alternating colors to create a swirl effect. Use a knife to gently swirl the colors together.
  9. Refrigerate for at least 4 hours or until set. Serve chilled.
