- ½ cup lemon curd
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then let cool completely.
- In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Divide the filling into three equal parts. Mix one part with strawberry puree, another with blueberry puree, and the last with lemon curd.
- Layer the fillings into the cooled crust, alternating colors to create a swirl effect. Use a knife to gently swirl the colors together.
- Refrigerate for at least 4 hours or until set. Serve chilled.
