Ingredients

Scale
  • For the Cookie Base:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
  • For the Chocolate Layer:
    • 2 cups semi-sweet chocolate chips
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract
  • For Topping:
    • 1 cup mini chocolate eggs, crushed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
  5. Spread the cookie dough evenly in the prepared baking pan and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  6. While the cookie base is baking, prepare the chocolate layer by heating the heavy cream in a saucepan over medium heat until it begins to simmer.
  7. Remove from heat and add the chocolate chips and vanilla extract, stirring until smooth and glossy.
  8. Once the cookie base is done, pour the chocolate mixture over the warm cookie layer and spread evenly.
  9. Sprinkle the crushed mini chocolate eggs on top and let cool completely before cutting into bars.

Notes

  • These bars can be made a day in advance and stored in an airtight container at room temperature.
  • For a different flavor, substitute the semi-sweet chocolate chips with milk chocolate or white chocolate chips.
  • Store leftovers in the refrigerator for up to a week.
