Ingredients

Scale
  • Crust:
    • 1 ½ cups graham cracker crumbs
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • Filling:
    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 1 tsp vanilla extract
    • 3 large eggs
    • ½ cup sour cream
    • ½ cup heavy cream
    • 1 cup chopped chocolate Easter eggs (e.g., Cadbury Crème Eggs)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until creamy.
  4. Add eggs one at a time, mixing well after each addition. Then, mix in sour cream and heavy cream until fully incorporated.
  5. Fold in the chopped chocolate Easter eggs gently.
  6. Pour the filling over the crust in the springform pan.
  7. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  9. Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
