A quick and easy one-pan meal featuring chicken, rice, and a delicious tzatziki sauce.

- 1 lb chicken breast, diced
- 1 cup rice
- 2 cups chicken broth
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the diced chicken, rice, and chicken broth.
- In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper to create the tzatziki sauce.
- Pour the tzatziki sauce over the chicken and rice mixture, stirring to combine.
- Cover the baking dish with foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender.
- Garnish with fresh dill before serving.
Notes
- For a spicier version, add red pepper flakes to the tzatziki sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish can be made with brown rice for a healthier option, but cooking time may vary.
