    • 1 large egg, beaten (for egg wash)
    • Cold water, as needed

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, sauté the onion and garlic over medium heat until translucent, about 5 minutes.
  3. Add the curry powder and cook for an additional minute until fragrant.
  4. Stir in the coconut milk and bring to a simmer.
  5. Add the fish, shrimp, and peas, cooking gently for 5-7 minutes until the fish is opaque.
  6. Remove from heat and stir in the cilantro, seasoning with salt and pepper to taste.
  7. For the pastry, combine flour and butter in a bowl, rubbing together until the mixture resembles breadcrumbs.
  8. Add cold water gradually until a dough forms, then wrap in cling film and chill for 30 minutes.
  9. Roll out the pastry and line a pie dish, filling it with the fish mixture.
  10. Cover with another layer of pastry, sealing the edges, and brush with beaten egg.
