Description

A comforting and versatile crumb cake, perfect for breakfast, dessert, or an afternoon snack with coffee or tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, ensuring they are fully incorporated after each addition. Stir in the vanilla extract and milk until smooth.
  4. Whisk together the flour, baking powder, salt, and cinnamon in a separate bowl, then gradually add to the wet ingredients, mixing until just combined.
  5. Pour half of the batter into the prepared baking pan and smooth it out.
  6. Combine the brown sugar, oats, a hint of cinnamon, and melted butter in another bowl until crumbly. Sprinkle half of this mixture over the batter.
  7. Pour the remaining batter on top and sprinkle the rest of the crumb topping across the surface.
  8. Bake for 30-35 minutes, until a toothpick inserted comes out clean.
  9. Allow to cool before serving.

Notes

You can prepare the crumb topping a day in advance. Store in the fridge before baking.
