Ingredients

- 1 block firm tofu, pressed and sliced
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 sandwich rolls
Instructions
- Preheat the oven to 400°F (200°C).
- Press the tofu to remove excess moisture and slice it into thick slabs.
- Set up a breading station with flour, breadcrumbs, and a bowl for the tofu.
- Dip each tofu slice in flour, then in breadcrumbs, ensuring they are well coated.
- Heat olive oil in a skillet over medium heat and fry the tofu slices until golden brown on both sides.
- Place the fried tofu on a baking sheet, top each slice with marinara sauce and mozzarella cheese.
- Bake in the oven for 10-15 minutes until the cheese is melted and bubbly.
- Assemble the sandwich by placing the crispy tofu on the rolls, adding more marinara sauce if desired, and sprinkle with parmesan cheese.
- Serve hot and enjoy!

- For a gluten-free option, use gluten-free breadcrumbs and flour.
- Feel free to add fresh basil or spinach for extra flavor.
