- 6 Chicken Drumsticks
- 1 Cup Buttermilk (or Thin Yogurt)
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
- 1 Cup All-Purpose Flour (Maida)
- 1/4 Cup Corn Flour
- 1/2 Tsp Garlic Powder
- 1 Tsp Paprika/Red Chilli Powder
- 1/4 Tsp Baking Powder
- Oil for Frying
Instructions
- Marinate the Chicken: In a large bowl, immerse the chicken drumsticks in buttermilk, sprinkle in salt and black pepper, and stir to coat thoroughly. Allow this to marinate for 3–4 hours (overnight is even better for tenderness).
- Prepare the Coating: In another bowl, combine all-purpose flour, corn flour, garlic powder, paprika, and baking powder. Mix until evenly integrated to ensure every piece gets that delicious coating.
- Coat the Chicken: Taking the marinated chicken from the buttermilk, let excess drip off, then dredge it in the flour mixture. For an extra crispy texture, repeat—dip the chicken back into the buttermilk and then in the flour mixture again.
- Heat the Oil: In your deep fryer or heavy pot, heat oil over medium flame to about 350°F (175°C). Fry in batches to avoid overcrowding, which can lower the oil temperature.
- Fry Until Golden Brown: Fry each piece for about 12–15 minutes, or until they’re golden brown and cooked through (internal temperature should reach 165°F or 75°C). Ensure you turn them occasionally for even cooking.
- Drain and Serve: Once done, transfer the chicken to a wire rack to drain off excess oil. Serve hot with a side of ketchup or mayonnaise for dipping.
Notes
For a healthier option, consider using an air fryer or oven instead of frying. Store leftovers in an airtight container for up to 3 days.
