- 1 kg Chicken (any part)
- 2 cups Buttermilk
- 1.5 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- 1.5 tsp Paprika
- 1 tsp Red Chili Powder
- 1/2 tsp White Pepper
- 2 cups All-purpose Flour
- 1/2 cup Cornflour
- 1 tsp Baking Powder
- Cold Water (as needed)
- Oil (for deep frying)
Instructions
- Prep the chicken: Thoroughly wash and pat dry.
- Marinate the chicken in buttermilk, salt, black pepper, garlic powder, paprika, red chili powder, and white pepper; refrigerate for at least 4 hours, preferably overnight.
- Make the flour mixture by whisking together flour, cornflour, and baking powder.
- Coat the chicken in the flour mixture, then spritz with cold water and toss again in the flour mixture.
- Heat oil in a fryer or pot to 170°C–175°C.
- Fry the chicken for 12 to 15 minutes until golden brown and crispy.
- Rest the chicken on a cooling rack for 2 to 3 minutes before serving.
Notes
For a healthier option, try baking or air frying the chicken. Experiment with spices to enhance flavor.
