Ingredients

  • Potatoes: 4 large russet potatoes, scrubbed clean
  • Olive Oil: 2 tablespoons, for brushing
  • Chili: 1 cup cooked chili (beef or vegetarian)
  • Cheese: 1 cup shredded cheddar cheese
  • Sour Cream: ½ cup, for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the potatoes with a fork and bake them for 45-60 minutes until tender.

  6. Bake the skins in the oven for an additional 15-20 minutes until they are crispy and golden brown.
  7. Remove from the oven and fill each skin with a generous amount of chili.
  8. Top with shredded cheddar cheese and return to the oven for 5-7 minutes until the cheese is melted and bubbly.
  9. Serve hot, topped with sour cream and chopped green onions.
